Ingredients

  • 1 1/2 cups hot chicken bouillon
  • 1/2 cup uncooked regular rice
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder
  • 3 to 4 medium carrots, sliced
  • 1 pound orange roughy fillets
  • paprika
  • 1/2 cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 375°F.
  2. In an 8x12-inch baking dish, combine hot chicken bouillon, uncooked rice, Italian seasoning, and garlic powder.
  3. Top with sliced carrots. Cover and bake at 375°F for 15 minutes.
  4. Add fish fillets and sprinkle lightly with paprika.
  5. Bake covered at 375°F for an additional 15 minutes or until fish flakes easily with a fork.
  6. Stir the rice to combine.
  7. Top the fish with shredded Cheddar cheese.
  8. Bake uncovered for 3 minutes until cheese is melted.
