Ingredients

  • 2 lb. ground chuck
  • 1 (46 oz.) can tomato juice
  • 2 Tbsp. chili powder
  • 6 (14.5 oz.) cans Veg-All mixed vegetables
  • 5 to 7 onions, diced
  • 5 to 7 potatoes, diced
  • 1 (6 oz.) pkg. elbow macaroni
  • 1 (14.5 oz.) can pinto beans

Instructions

  1. In a saucepan, brown the ground chuck.
  2. Add chili powder and tomato juice to the meat and simmer for 15 to 20 minutes.
  3. While the mixture is simmering, cook diced potatoes and onions until tender.
  4. Cook the elbow macaroni according to package directions.
  5. Add the cooked macaroni and mixed vegetables to the meat mixture.
  6. Simmer the combined soup for an additional 1 to 2 hours before serving.
