Ingredients

  • 1 1/2 cups white cornmeal mix

Instructions

  1. Mix cornmeal, self-rising flour, baking powder, egg, and milk in a large mixing bowl.
  2. Pour the batter into a well-oiled 9 x 13-inch baking pan.
  3. Bake in a 450°F oven for 25 to 30 minutes or until done.
  4. Cool the baked cornbread and crumble it into a large bowl.
  5. Cook chopped celery and onion in a small amount of water until tender, not mushy.
  6. Drain the cooked vegetables.
  7. Add Lipton Cup-a-Soup mix, chicken broth, dissolved bouillon cube, and melted margarine to the crumbled cornbread.
  8. Mix well to combine.
  9. Add the cooked celery and onion, along with the chopped boiled eggs, to the mixture.
  10. Mix thoroughly.
  11. Pour the mixture into a baking dish and bake at 400°F for about 45 minutes or until heated through and golden on top.
