- Drain the green beans, peas, corn, and pimentos and place them in a large bowl.
- Add grated carrots and chopped onion to the bowl.
- In a small saucepan, heat the oil, vinegar, sugar, water, salt, and pepper until the sugar dissolves.
- Let the dressing cool slightly, then pour it over the vegetables, tossing to coat.
- Refrigerate the salad overnight to allow flavors to meld, then serve chilled.
