Ingredients

  • 1 lb bacon
  • 1 package sliced Swiss cheese or Feta cheese
  • 6 large potatoes
  • Parmesan cheese
  • 4 to 6 sliced green onions
  • salt
  • pepper

Instructions

  1. Line a cast-iron skillet with bacon slices.
  2. Layer thinly sliced potatoes, crumbled Swiss or Feta cheese, and sliced green onions.
  3. Sprinkle each layer with salt, pepper, and Parmesan cheese.
  4. Dot the top layer with margarine.
  5. Cook on the stove for 5 minutes.
  6. Cover and bake in a 425°F oven for 45 minutes.
  7. Turn off the oven and let sit for 15 minutes.
  8. Drain off excess grease and reverse onto a platter.
