Ingredients

  • 1 1/2 cups fresh grapefruit chunks
  • 1/2 cup fresh grapefruit juice
  • 1/3 cup honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon or nutmeg
  • 1 (1 lb. 2 oz.) can whole sweet potatoes
  • 12 cooked prunes

Instructions

  1. Drain the sweet potatoes and arrange them in a 1 1/2 quart casserole dish.
  2. Top the sweet potatoes with cooked prunes and fresh grapefruit chunks.
  3. In a small bowl, combine grapefruit juice, honey, salt, and cinnamon or nutmeg.
  4. Pour the mixture over the potatoes and fruit.
  5. Bake at 350°F for 30 minutes.
