Ingredients

  • 2 lb. boneless chicken breasts
  • 1/2 cup flour
  • 1/2 cup olive oil
  • 1 cup sour cream
  • 3 eggs
  • 1 cup Asiago grated cheese
  • 4 plum tomatoes
  • 3 scallions
  • 1 clove fresh garlic

Instructions

  1. In a pan with 1/4 cup olive oil, sauté the chopped plum tomatoes, scallions, and minced garlic.
  2. Mix sour cream and eggs in a bowl.
  3. Dip the pressed chicken breasts into the sour cream and egg mixture, then coat with flour.
  4. Place the coated chicken breasts on a baking sheet with 1/4 cup olive oil.
  5. Bake at 350°F for 20 minutes.
  6. Remove from the oven.
  7. Spread the sautéed tomato mixture over the baked chicken.
  8. Top with grated Asiago cheese.
  9. Bake for an additional 10 minutes.
  10. Remove from oven and let set for 10 minutes before serving.
