Ingredients

  • 1 medium onion, coarsely chopped
  • 3 medium garlic cloves, finely chopped
  • 2 Tbsp. extra virgin olive oil
  • 1 (35 oz.) can Italian peeled tomatoes
  • 1/4 tsp. crushed red pepper
  • 3/4 tsp. salt
  • 1/4 tsp. black pepper
  • 10 oz. dried ziti
  • 1 lb. fresh spinach, stems discarded, washed, and chopped
  • 6 oz. part skim mozzarella cheese, diced

Instructions

  1. In a large skillet, cook the onion and garlic in olive oil until the onion is soft.
  2. Break up the canned peeled tomatoes and add them with their juice to the skillet.
  3. Stir in crushed red pepper.
  4. Increase the heat and boil the sauce until the liquid has evaporated, about 18 minutes.
  5. Season the sauce with salt and black pepper.
  6. Keep the sauce warm while cooking the ziti.
  7. Cook the dried ziti in boiling salted water until al dente, then drain.
  8. In a large bowl, combine cooked ziti, the tomato sauce, chopped spinach, and diced mozzarella.
  9. Transfer the mixture to a greased baking dish.
  10. Bake at 375°F (190°C) for about 20 minutes or until bubbly and golden on top.
