Green Bean Pilaf

Ingredients

  • 1 large yellow onion
  • 2 Tbsp butter
  • 10 medium fresh mushrooms
  • 1/4 tsp dried tarragon
  • 1/2 cup long grain rice
  • 1 1/2 cups chicken broth
  • 3/4 lb fresh green beans
  • salt to taste
  • pepper to taste

Instructions

  1. Chop the yellow onion.
  2. Melt butter in a pan.
  3. Add the chopped onion and cook until translucent.
  4. Chop the fresh mushrooms.
  5. Add mushrooms to the pan and sauté with the onions.
  6. Add dried tarragon and long grain rice.
  7. Cook over low heat, stirring constantly for 3 minutes.
  8. Stir in chicken broth and bring to a boil.
  9. Cover and simmer for 20 minutes.
  10. Wash and trim green beans into 1-inch pieces.
  11. Cook green beans in water with a little salt for 10 minutes.
  12. Drain the green beans.
  13. Gently fold green beans into the cooked rice mixture.
  14. Add salt and pepper to taste before serving.
