Ingredients

  • 1 Tbsp. vegetable oil
  • 1 onion, chopped
  • 1-2 Tbsp. green curry paste
  • 1 1/2 c. coconut milk
  • 1/2 c. water
  • 1 lb. chicken thigh fillets or boneless chicken breasts, cut into bite-sized pieces
  • 1/4 lb. fresh green beans, cut into 1-inch pieces
  • 6 kaffir lime leaves
  • 1 Tbsp. fish sauce
  • 1 Tbsp. fresh lime juice
  • 1 tsp. finely grated lime rind
  • 2 tsp. soft brown sugar
  • 1/4 c. fresh cilantro, chopped

Instructions

  1. Heat the oil in a wok or large, heavy frying pan.
  2. Add the onion and green curry paste; cook for one minute, stirring constantly.
  3. Add the coconut milk and water; bring to a boil.
  4. Add the chicken pieces, green beans, and kaffir lime leaves; stir to combine.
  5. Reduce the heat and simmer for 15-20 minutes or until the chicken is tender.
  6. Add the fish sauce, lime juice, lime rind, and sugar; stir to combine.
  7. Sprinkle with chopped cilantro just before serving.
  8. Serve with steamed rice.
