Ingredients

  • 6 oz. cottage cheese
  • 1/2 tsp. salt
  • 1 small onion, chopped
  • 1 pkg. Jiffy corn bread mix
  • 1 pkg. chopped broccoli, drained
  • 1 stick margarine
  • 2 eggs, whipped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine cottage cheese, salt, chopped onion, drained chopped broccoli, and whipped eggs.
  3. Add the Jiffy corn bread mix and stir until well blended.
  4. Pour the batter into a greased baking dish.
  5. Bake for 30 minutes or until golden brown on top.
