Ingredients

  • 1 cup onions
  • 1 cup green pepper
  • 1 cup celery
  • 8 oz can mushrooms
  • 5 to 6 cups diced chicken
  • 10 oz green noodles
  • 1 can cream of mushroom soup
  • 1 stick oleo
  • 1 large jar diced pimento
  • 1 pound Velveeta cheese

Instructions

  1. Saute onions, green pepper, and celery in oleo until tender.
  2. Add Velveeta cheese (cut into small pieces), cream of mushroom soup, mushrooms, diced pimento, and diced chicken to the sautéed vegetables. Stir until cheese melts and ingredients are combined.
  3. Cook green noodles in broth where the chicken was cooked until tender.
  4. Add cooked noodles to the cheese and chicken mixture and mix well.
  5. Pour the mixture into a casserole dish.
  6. Bake in a 350°F oven, covered, for 25 to 30 minutes.
  7. Remove cover and cook for an additional 5 minutes until browned.
