Ingredients

  • 7 lb. small firm green tomatoes
  • 2 gal. lime water (3 c. hydrated lime to 2 gal. water)
  • 4 lb. sugar
  • 3 pt. vinegar
  • 1 tsp. cloves
  • 1 tsp. ginger
  • 1 tsp. celery seed
  • 1 tsp. mace
  • 1 tsp. cinnamon

Instructions

  1. Slice small firm green tomatoes 3/16-inch thick.
  2. Soak the tomato slices in lime water for 24 hours.
  3. Drain the lime water from the tomatoes.
  4. Soak the tomatoes in clear water for 4 hours, changing the water every hour, gently rinsing to remove lime residue.
  5. Drain the tomatoes carefully to avoid breaking the brittle slices.
  6. Prepare a syrup by combining 4 lb. sugar, 3 pt. vinegar, and spices: 1 tsp. each of cloves, ginger, celery seed, mace, and cinnamon.
  7. Cook the syrup until the sugar dissolves and the spices are infused.
  8. Simmer the tomato slices in the syrup until they are glazed and slightly tender.
  9. Remove the slices and let them dry on racks or parchment paper.
  10. Store the dried tomato crisps in an airtight container.
