- Slice small firm green tomatoes 3/16-inch thick.
- Soak the tomato slices in lime water for 24 hours.
- Drain the lime water from the tomatoes.
- Soak the tomatoes in clear water for 4 hours, changing the water every hour, gently rinsing to remove lime residue.
- Drain the tomatoes carefully to avoid breaking the brittle slices.
- Prepare a syrup by combining 4 lb. sugar, 3 pt. vinegar, and spices: 1 tsp. each of cloves, ginger, celery seed, mace, and cinnamon.
- Cook the syrup until the sugar dissolves and the spices are infused.
- Simmer the tomato slices in the syrup until they are glazed and slightly tender.
- Remove the slices and let them dry on racks or parchment paper.
- Store the dried tomato crisps in an airtight container.
