Ingredients

  • Fresh mullet fish
  • Salt
  • Red pepper (dried), crushed
  • Lemon pepper

Instructions

  1. Scale the fish, remove the head, and clean well.
  2. Cut on either side of the dorsal fin, fillet, and remove the backbone.
  3. Leave the fish whole.
  4. Salt the fish generously.
  5. Rub the fish with crushed red pepper and lemon pepper.
  6. Place the fish in a Ziploc bag and refrigerate overnight.
  7. When ready to cook, rinse the fish and pat dry.
  8. Preheat a charcoal grill over white coals.
  9. Place the fish on a fish griller or a closely spaced rack sprayed with Pam.
  10. Cook the fish over the grill until done.
