Ingredients

  • 1 small onion
  • 1 Tbsp. butter
  • 1 lb. fish fillets
  • 1/4 cup lemon juice
  • 1/2 tsp. oregano
  • 2 cups sliced zucchini or broccoli
  • 1 cup sliced mushrooms
  • 1/2 cup diced tomato
  • 1/2 cup shredded cheese

Instructions

  1. Cook the onion until clear.
  2. Add fish fillets, lemon juice, oregano, sliced zucchini or broccoli, and sliced mushrooms to the pan.
  3. Cover and simmer for 10 minutes.
  4. Top with diced tomato and shredded cheese.
  5. Cover and simmer for an additional 2 minutes until the cheese melts.
  6. Serve immediately.
