Ingredients

  • 2 1/2 lb. fryer chicken, cut up
  • 3 Tbsp. cooking oil
  • 1 lb. beef stew meat, cut into 1-inch pieces
  • 2 medium onions, chopped
  • 1 medium green pepper, chopped
  • 28 oz. can tomatoes, cut up
  • 1 tsp. salt
  • 1 to 2 tsp. ground red pepper
  • 3/4 cup peanut butter
  • mashed sweet potatoes or hot cooked rice

Instructions

  1. In a large saucepan, brown chicken pieces in hot oil about 15 minutes; remove from pan.
  2. Set aside, reserving drippings.
  3. Add beef, onions, and green pepper; cook until beef is brown and onions are tender.
  4. Drain and stir in undrained tomatoes, salt, and ground red pepper; bring to boiling, then reduce heat.
  5. Cover and simmer for 30 minutes.
  6. Add chicken back into the mixture; simmer for 20 minutes.
  7. In a small saucepan, melt peanut butter over low heat.
  8. Stir melted peanut butter into the chicken mixture.
  9. Bring to a boil, then reduce heat and simmer for 20 minutes more.
  10. Skim off excess fat from the surface.
  11. Serve hot with mashed sweet potatoes or cooked rice.
