Ground Peanut Stew
Creamy ground peanut stew features tender chicken, beef, and vegetables in a rich, flavorful sauce, perfect for comforting meals and suitable for family dinners or casual gatherings.
Ingredients
- 2 1/2 lb. fryer chicken, cut up ⓘ
- 3 Tbsp. cooking oil ⓘ
- 1 lb. beef stew meat, cut into 1-inch pieces ⓘ
- 2 medium onions, chopped ⓘ
- 1 medium green pepper, chopped ⓘ
- 28 oz. can tomatoes, cut up ⓘ
- 1 tsp. salt
- 1 to 2 tsp. ground red pepper
- 3/4 cup peanut butter ⓘ
- mashed sweet potatoes or hot cooked rice ⓘ
Instructions
- In a large saucepan, brown chicken pieces in hot oil about 15 minutes; remove from pan.
- Set aside, reserving drippings.
- Add beef, onions, and green pepper; cook until beef is brown and onions are tender.
- Drain and stir in undrained tomatoes, salt, and ground red pepper; bring to boiling, then reduce heat.
- Cover and simmer for 30 minutes.
- Add chicken back into the mixture; simmer for 20 minutes.
- In a small saucepan, melt peanut butter over low heat.
- Stir melted peanut butter into the chicken mixture.
- Bring to a boil, then reduce heat and simmer for 20 minutes more.
- Skim off excess fat from the surface.
- Serve hot with mashed sweet potatoes or cooked rice.
