Groundnut Stew is a rich, hearty dish with tender beef, flavorful spices, and a creamy peanut butter sauce, perfect for comforting family meals or gatherings.

Ingredients

  • 3 Tbsp. oil
  • 2 lb. beef cubes
  • 1/2 tsp. nutmeg
  • 1 Tbsp. chili powder
  • 4 medium onions
  • 1 clove garlic
  • 3/4 c. tomato paste
  • 6 c. water
  • red pepper
  • 1/2 c. chunky peanut butter

Instructions

  1. In a large skillet, heat the 3 tablespoons of oil.
  2. Add the beef cubes and brown.
  3. While browning, add the nutmeg and chili powder.
  4. When the meat is browned, add the chopped onions, minced garlic, tomato paste, water, and red pepper.
  5. Simmer until the meat is tender, about 50 minutes.
  6. Half an hour before serving, heat the peanut butter and remaining oil in a small saucepan.
  7. Stir over medium heat for 5 minutes.
  8. Gradually add the peanut butter mixture to the beef stew, stirring well.
  9. Simmer for an additional 20 minutes.
  10. Serve the stew over rice.
