Ingredients

  • 2 Tbsp. shortening
  • 2 c. rice
  • 1 small onion, chopped
  • 1 garlic bud, whole
  • 1 tomato, chopped
  • 2 Tbsp. peas
  • 2 Tbsp. green beans, chopped
  • 1/2 carrot, finely chopped
  • 1/4 green pepper, chopped
  • 3 c. water
  • 1 tsp. salt

Instructions

  1. Heat shortening in a pan.
  2. Add rice and fry until nicely browned, stirring constantly.
  3. Add chopped onion and chopped tomato, and cook slightly.
  4. Pour in water and add peas, chopped green beans, finely chopped carrot, chopped green pepper, and salt.
  5. Cover and bring quickly to a boil.
  6. Lower the heat and cook about 45 minutes or until done.
  7. Do not stir during cooking.
  8. When serving, remove with a fork.
