Ingredients

  • 1 cup butter or margarine
  • 2 cups sugar
  • 6 eggs, separated
  • 1 1/2 cups sifted flour
  • 1/2 teaspoon salt
  • Confectioners' sugar
  • 2 teaspoons baking powder
  • 6 tablespoons milk
  • 1 teaspoon vanilla or 1/2 teaspoon almond extract

Instructions

  1. Cream the butter to the consistency of mayonnaise. Gradually add sugar and continue creaming until light and fluffy.
  2. Beat in egg yolks one at a time.
  3. Sift together the flour, salt, and baking powder.
  4. Combine the flour mixture with milk and flavoring (vanilla or almond extract).
  5. Add the flour mixture and milk alternately to the butter mixture, stirring gently but thoroughly.
  6. Beat egg whites until stiff but not dry. Fold into the batter thoroughly.
  7. Spoon the batter into a well-greased tube pan.
  8. Bake at 350°F (175°C) for 1 hour and 10 minutes or until done.
  9. Cool in the pan for 10 minutes.
  10. Gently loosen the cake around the rim and tube, then invert onto a cake rack.
  11. Cool completely and dust with confectioners' sugar. Garnish with maraschino cherries if desired.
