Gugelhuff
A light, fluffy gugelhuff cake with rich vanilla flavor, perfect for special occasions or teatime, topped with powdered sugar and garnished with cherries for a festive touch.

- Cream the butter to the consistency of mayonnaise. Gradually add sugar and continue creaming until light and fluffy.
- Beat in egg yolks one at a time.
- Sift together the flour, salt, and baking powder.
- Combine the flour mixture with milk and flavoring (vanilla or almond extract).
- Add the flour mixture and milk alternately to the butter mixture, stirring gently but thoroughly.
- Beat egg whites until stiff but not dry. Fold into the batter thoroughly.
- Spoon the batter into a well-greased tube pan.
- Bake at 350°F (175°C) for 1 hour and 10 minutes or until done.
- Cool in the pan for 10 minutes.
- Gently loosen the cake around the rim and tube, then invert onto a cake rack.
- Cool completely and dust with confectioners' sugar. Garnish with maraschino cherries if desired.
