Ingredients

  • 4 red peppers
  • 4 green peppers
  • 4 large Spanish onions
  • 16 oz can tomato sauce
  • oregano
  • Italian spice
  • garlic powder or salt
  • 32 Italian sausages
  • sub rolls

Instructions

  1. Slice the red and green peppers and big Spanish onions.
  2. Saute the sliced peppers and onions in a large skillet with a little oil until tender.
  3. Transfer the sautéed vegetables to a large pot.
  4. Add one can of tomato sauce and season with oregano, Italian spice, garlic powder or salt to taste.
  5. Let the mixture simmer, stirring well to combine flavors.
  6. Cook the sausages until browned and drain excess fat.
  7. Place the whole sausages into the sauce, ensuring they are well covered.
  8. Taste the sauce and adjust spices as needed.
  9. Serve the sausage and sauce mixture on sub rolls.
