Ingredients

  • 2 lb. halibut
  • 2 c. pancake mix
  • 1 1/2 c. flat beer
  • flour
  • oil

Instructions

  1. Cut the halibut into 2-inch chunks.
  2. Mix pancake mix with flat beer to create a batter.
  3. Dip each halibut piece into flour, then into the batter, and finally into hot oil.
  4. Fry the coated halibut pieces for about 8 minutes until golden and cooked through.
  5. Drain on paper towels and serve hot.
