A hearty casserole combining tender cabbage, savory ground beef, rice, and flavorful tomato and sauerkraut layers, perfect for comforting family dinners or gatherings.

Ingredients

  • 1 medium head of cabbage, sliced and cored
  • 1 medium onion, chopped
  • 14 oz can diced tomatoes
  • 1 small can tomato soup
  • 2 lbs lean ground beef
  • 2/3 cup precooked rice
  • 1 small onion, chopped
  • 1/2 cup green or red pepper, chopped

Instructions

  1. Simmer cabbage and chopped onion in a pot of lightly salted water until tender.
  2. Drain and set aside.
  3. Mix diced tomatoes and tomato soup in a bowl and set aside.
  4. In a separate bowl, combine ground beef, cooked rice, chopped small onion, and chopped pepper.
  5. Season with salt and pepper to taste.
  6. Spread half of the tomato mixture on the bottom of a 9x13 inch pan.
  7. Layer half of the cabbage mixture on top of the tomato mixture.
  8. Spoon dollops of the beef mixture over the cabbage layer.
  9. Repeat layering with the remaining tomato mixture, cabbage, and beef mixture, without patting down.
  10. Top the meat layer with the remaining cabbage.
  11. Spread the remaining tomato mixture over the cabbage.
  12. Drain sauerkraut and layer it on top.
  13. Pour sauerkraut juice over the layers.
  14. Add enough water to come within 1/2 inch of the top of the pan.
  15. Cover with foil and bake at 350°F for at least 1 hour.
  16. Let sit for a while before serving.
