Ingredients

  • 6 eggs or 2 eggs plus 6 whites for lower cholesterol
  • 1/2 c. milk
  • 1 Tbsp. parsley
  • 1/8 tsp. pepper
  • salt to taste
  • 1/2 c. red or green pepper, diced
  • 1/4 c. onion, chopped
  • 10 oz. frozen spinach, thawed and drained
  • pinch of nutmeg
  • 4 oz. cubed ham
  • 1/2 c. low-fat cottage cheese
  • 1 c. Cheddar cheese, shredded
  • Parmesan cheese

Instructions

  1. Whip together first 5 ingredients.
  2. Saute pepper and onion. Add spinach and nutmeg.
  3. Cook 5/8 cup egg mixture in greased 10-inch skillet as for an omelet.
  4. Slide or roll into greased 10-inch round quiche pan.
  5. Layer 1/2 ham, 1/2 spinach, 1/2 cottage cheese and 1/2 Cheddar cheese on top.
  6. Cook another omelet and repeat layers.
  7. Cook a third omelet.
  8. Slide on top of layers. Sprinkle with Parmesan. Bake for 20 to 25 minutes at 375° until hot.
