A hearty ham and potato scallop features tender sliced potatoes layered with ham, topped in a creamy tomato sauce, and baked until golden. Perfect for family dinners.

Ingredients

  • 2 slices ham, 1/2-inch thick
  • 4 large potatoes
  • 2 Tbsp. butter
  • 1 1/2 Tbsp. flour
  • 1/2 cup tomato juice
  • 1 1/4 cups milk
  • shake of paprika

Instructions

  1. Cut ham into serving pieces and place in a greased dish.
  2. Slice potatoes 1/4-inch thick and layer over the ham.
  3. Melt butter in a pan, stir in flour, then add tomato juice and milk.
  4. Cook and stir until thickened. Season with salt and pepper.
  5. Pour the sauce over the potatoes and ham.
  6. Sprinkle with paprika.
  7. Cover and bake at 375°F for 1 1/2 hours.
