Ingredients

  • 2 c. navy beans
  • 5 c. water
  • 1 small onion, chopped
  • 1 1/2 tsp. salt
  • 2 slices bacon
  • 1/4 c. maple syrup
  • 2 Tbsp. brown sugar
  • 1 tsp. dry mustard
  • 1/4 c. catsup
  • 1 Tbsp. Worcestershire
  • 1 tsp. vinegar
  • 1/4 tsp. Tabasco sauce

Instructions

  1. Wash and pick over the navy beans.
  2. Put the beans, water, chopped onion, and salt in an electric bean pot.
  3. Mix well to combine.
  4. Cover with a lid and cook overnight, for about 9 to 10 hours.
  5. Drain the beans, leaving as much liquid as desired.
  6. Add the remaining ingredients: bacon, maple syrup, brown sugar, dry mustard, catsup, Worcestershire, vinegar, and Tabasco sauce.
  7. Cook for an additional 1 to 2 hours until heated through and flavors meld.
