Ingredients

  • 12 potatoes, peeled and cubed
  • 2 large onions, finely chopped
  • 2 lb Velveeta cheese, cubed
  • black pepper to taste
  • 3 Tbsp. flour
  • 1 1/2 tsp. flour

Instructions

  1. Place potatoes, chopped onions, and cubed ham in a large pot. Cover with water and cook until potatoes are almost tender.
  2. Remove about 1 cup of cooked potatoes and mash them in a bowl with a fork.
  3. Add some of the cooking liquid (about a teaspoon at a time) along with 3 tablespoons of flour until you form a thick paste.
  4. Return the mashed potatoes and paste to the pot with the remaining ingredients.
  5. Add the cubed Velveeta cheese to the pot and let simmer until the cheese melts completely.
  6. Season with black pepper to taste.
  7. Stir in the milk and heat through before serving.

Tips & Substitutions

For a creamier texture, consider adding some heavy cream or half-and-half along with the milk. If you prefer a lighter version, substitute some of the potatoes with cauliflower. You can also use different cheeses like cheddar for a sharper flavor. Ensure to stir frequently while the cheese melts to prevent it from sticking to the bottom of the pot.

Serving Suggestions

Serve this hearty soup with crusty bread or a side salad for a complete meal. It pairs beautifully with Roxanne'S Princess Bars for a sweet finish. For a touch of freshness, sprinkle some chopped chives or parsley on top just before serving. This soup also makes a great starter for a cozy dinner with friends.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm on the stovetop over low heat, stirring often. You can add a splash of milk to restore the desired consistency. Avoid reheating in the microwave as it might alter the texture of the cheese.

Frequently Asked Questions

Can I use pre-cooked ham for this soup?

Yes, using pre-cooked ham is a great time-saver and adds flavor to the soup. Just ensure to adjust the cooking time accordingly, as you'll want to heat it through without overcooking the potatoes.

Is it possible to make this soup vegetarian?

Absolutely! You can omit the ham and use vegetable broth instead of water for cooking the potatoes. Additionally, you can substitute Velveeta with a plant-based cheese for a vegetarian version of this comfort dish.

What can I do if the soup is too thick?

If your soup turns out too thick, simply add more milk or broth until you reach your desired consistency. Stir well to combine, and allow it to simmer for a few more minutes to meld the flavors.
