Ingredients

  • 7 medium potatoes
  • 1/2 cup minced onion
  • 2 tablespoons butter
  • 2 cups milk
  • 8 ounces lean ham
  • 1 (10 3/4 ounce) can cream of mushroom soup
  • 1 (17 ounce) can cream-style corn
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper (optional)

Instructions

  1. Cook potatoes until tender in salted water, then drain and cut into small pieces.
  2. Melt butter in a large saucepan and sauté minced onion until translucent.
  3. Add cream-style corn, salt, and black pepper to the saucepan.
  4. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
  5. Add cooked potatoes, lean ham, and cream of mushroom soup to the saucepan.
  6. Stir well and heat through before serving.
