Ingredients

  • 1 lb. ground beef
  • 1 medium onion
  • 1/2 clove garlic, minced
  • 1 packet beef bouillon
  • 1 1/4 cups quick cooking rice
  • 1 (8 oz.) can tomato sauce
  • 1/2 teaspoon basil leaves
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 large green peppers

Instructions

  1. Saute the hamburger, onion, and garlic until the onions are soft and clear.
  2. Mix the beef mixture, rice, tomato sauce, basil, salt, and pepper in a medium bowl.
  3. Remove the tops, pulp, and seeds from the green peppers.
  4. Fill each pepper with a quarter of the mixture.
  5. Pour an additional 8 ounces of tomato sauce over the peppers before cooking.
  6. Place the filled peppers in an 8 x 8-inch baking dish.
  7. Cover the dish with plastic wrap.
  8. Microwave on high for 10 to 15 minutes or until the peppers are tender and the rice is rehydrated.
  9. Top with cheese during the last minute of cooking.
  10. Let stand for 3 minutes before serving.
