Hamburger Upside-Down Cornbread

Ingredients

  • 2 Tbsp. oleo
  • 1 c. onion
  • 1 1/2 lb. hamburger
  • 1 tsp. chili powder
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 can (10 1/2 oz.) tomato puree
  • 1 Tbsp. flour
  • 1 pkg. cornbread mix
  • 1 Tbsp. water

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Saute the onion in butter until translucent.
  3. Add the hamburger and brown thoroughly.
  4. Stir in chili powder, salt, pepper, and tomato puree.
  5. Simmer the mixture for 5 minutes.
  6. Combine flour and water; add to the meat mixture and stir until thickened.
  7. Spread the meat mixture evenly in a 9 x 9 x 1 3/4-inch pan.
  8. Prepare the cornbread mix according to package directions.
  9. Spread the cornbread batter over the hamburger mixture.
  10. Bake for 20 minutes at 400°F (200°C).
