Ingredients

  • 1 packet yeast
  • 1 Tbsp sugar
  • 1/2 cup warm water
  • 1 cup oatmeal
  • 1 cup warm water
  • 2 tsp salt
  • 1/4 cup cooking oil
  • 1/2 cup brown sugar
  • 1/2 cup nonfat dry milk
  • 2 beaten eggs
  • 3 cups all-purpose flour

Instructions

  1. Ensure all ingredients are at room temperature, except where otherwise indicated.
  2. Activate the yeast by combining the packet with 1 tablespoon of sugar and 1/2 cup warm water; let it sit until frothy.
  3. In a large mixing bowl, combine oatmeal, 1 cup warm water, salt, cooking oil, brown sugar, nonfat dry milk, and beaten eggs.
  4. Add the activated yeast mixture to the bowl and mix well.
  5. Gradually add approximately 3 cups of all-purpose flour and 3 cups of whole wheat flour, mixing until a soft dough forms.
  6. Knead the dough on a floured surface until smooth and elastic, about 8-10 minutes.
  7. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place until doubled in size, about 1 to 1.5 hours.
  8. Punch down the risen dough and shape it into loaves or rolls as desired.
  9. Allow the shaped dough to rise again until nearly doubled, about 30-45 minutes.
  10. Preheat the oven to 375°F (190°C).
  11. Bake the bread in the preheated oven for 30-35 minutes, or until golden brown and sounds hollow when tapped.
  12. Remove from oven, let cool slightly before slicing and serving.
