Ingredients

  • 3 (28 oz.) cans tomatoes, drained and chopped
  • 2 large fresh tomatoes, finely chopped
  • 2 scallions, finely chopped
  • 1 small onion, finely chopped
  • 1 (4 oz.) can mild green chillies, chopped
  • splash of dry red wine
  • splash of juice from jar of hot jalapeno peppers
  • 3 or 4 hot jalapeno peppers, chopped
  • pinch of sugar
  • bit of cumin
  • bit of oregano
  • juice of 1 fresh lime

Instructions

  1. Combine all ingredients in a large bowl and adjust consistency to your liking.
  2. For a saucier salsa, blend the chunky bits and experiment until desired texture is achieved.
  3. Use a light touch when blending to avoid overprocessing.
  4. If the salsa is too thin and you prefer it chunkier, add a small amount of tomato sauce to thicken.
  5. Taste and adjust seasonings, acidity, and heat to suit your preference.
