Ingredients

  • 5 baking potatoes (8 oz.)
  • 2 tsp. vegetable oil
  • 1/2 cup chopped green peppers
  • 1/2 cup chopped onions
  • 1 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/2 tsp. paprika
  • 1/2 tsp. black pepper

Instructions

  1. Preheat a nonstick skillet and lightly spray with cooking spray.
  2. Bake and chill the baking potatoes, then peel and grate them.
  3. In a large bowl, combine the grated potatoes with chopped green peppers, onions, salt, garlic powder, paprika, and black pepper.
  4. Heat vegetable oil in the skillet over medium heat.
  5. Press the potato mixture into the skillet, forming a compact cake.
  6. Cook for about 15 minutes, until the bottom is golden brown.
  7. Carefully flip the cake and cook the other side for another 15 minutes until golden and cooked through.
  8. Slice and serve hot.
