Ingredients

  • 24 oz frozen hash brown potatoes
  • 2 cups dairy sour cream
  • 1 can cream of chicken soup
  • 1 stick butter
  • 1 teaspoon salt
  • 1 tablespoon minced onion
  • 2 cups shredded cheese
  • 2 cups crushed cornflakes

Instructions

  1. Place the frozen hash brown potatoes in a colander and let stand until completely thawed and excess moisture has drained off.
  2. Combine sour cream, cream of chicken soup, and melted butter in a bowl.
  3. Mix well until smooth.
  4. Add salt, minced onion, and shredded cheese; mix well to combine.
  5. Gently blend in the drained potatoes.
  6. Place the mixture into a shallow 2-quart casserole dish.
  7. Sprinkle the crushed cornflakes mixed with butter on top of the casserole.
  8. Bake uncovered in a preheated oven at 350°F (175°C) for about 50 minutes or until golden brown and bubbly.
