Ingredients

  • 2 (8 oz.) cans crushed pineapple
  • 1 (3 oz.) package cream cheese
  • 1 cup granulated sugar
  • 1 1/2 teaspoons vanilla
  • 1 egg
  • 2 cups sifted all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup sour cream

Instructions

  1. Drain the crushed pineapple well.
  2. Beat the cream cheese until fluffy.
  3. Gradually beat in sugar until smooth.
  4. Blend in vanilla.
  5. Beat in the egg.
  6. Sift together the flour, baking soda, and salt.
  7. Add the dry ingredients to the creamed mixture alternately with sour cream.
  8. Stir in the pineapple and chopped macadamia nuts.
  9. Pour the batter into greased 9-inch or two 7-inch loaf pans.
  10. Bake at 350°F for 45 minutes for small pans or 70 minutes for larger pans.
  11. Cool on a rack for 10 minutes.
  12. Remove from pans and cool overnight before slicing.
