- Drain the crushed pineapple well.
- Beat the cream cheese until fluffy.
- Gradually beat in sugar until smooth.
- Blend in vanilla.
- Beat in the egg.
- Sift together the flour, baking soda, and salt.
- Add the dry ingredients to the creamed mixture alternately with sour cream.
- Stir in the pineapple and chopped macadamia nuts.
- Pour the batter into greased 9-inch or two 7-inch loaf pans.
- Bake at 350°F for 45 minutes for small pans or 70 minutes for larger pans.
- Cool on a rack for 10 minutes.
- Remove from pans and cool overnight before slicing.
