Ingredients

  • 1/2 cup flour
  • 1/2 cup milk
  • 2 eggs
  • 1/8 teaspoon nutmeg
  • 1/4 cup butter
  • 2 tablespoons confectioners sugar
  • Juice of 1/2 lemon

Instructions

  1. Preheat a 12-inch iron skillet in a 425°F oven.
  2. Melt the butter in the hot skillet until just melted.
  3. In a bowl, combine flour, milk, eggs, and nutmeg. Beat lightly until the batter is slightly lumpy.
  4. Pour the batter into the hot skillet.
  5. Bake at 425°F for 15 minutes.
  6. Sprinkle the pancake with confectioners sugar and lemon juice.
  7. Serve with your favorite toppings.
