Ingredients

  • 1 3/4 cups yellow cornmeal
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup sour milk or dairy buttermilk
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1 cup cream-style corn
  • 1 teaspoon minced jalapeno peppers
  • 2 teaspoons minced green peppers
  • 1 small onion minced

Instructions

  1. Heat the oven to 400°F.
  2. Combine all ingredients in a mixing bowl.
  3. Pour the batter into 2 hot, greased 12-cup muffin pans or line with paper cups, filling each to 2/3 full.
  4. Bake for 30 minutes or until golden brown.
  5. Remove from oven and let cool slightly before serving.
