Ingredients

  • 3 oz. skinned hazelnuts
  • 2 cups flour
  • 1 tsp. orange zest
  • 1/4 tsp. salt
  • 3/4 cup butter or margarine
  • 1/2 cup packed light brown sugar
  • 1 egg
  • 3/4 tsp. vanilla extract
  • 2/3 cup strawberry jam
  • confectioners sugar (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Butter and flour a 9-inch square baking pan.
  3. Process the hazelnuts until finely chopped or ground.
  4. In a mixing bowl, combine flour, orange zest, and salt.
  5. In a separate bowl, beat butter and brown sugar until creamy.
  6. Add egg and vanilla extract to the butter mixture and mix well.
  7. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  8. Press the dough evenly into the prepared baking pan.
  9. Spread the strawberry jam evenly over the crust.
  10. Bake in the preheated oven for about 20 minutes or until golden.
  11. Allow to cool before slicing and dusting with confectioners sugar if desired.
