Ingredients

  • 1 cup granulated sugar
  • 1 cup shortening
  • 1 tablespoon vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup firmly packed brown sugar
  • 2 eggs
  • 2 cups flour
  • 1/2 teaspoon baking powder
  • 1 cup quick cooking oats
  • 1 cup All-Bran cereal or bran flakes
  • 1 cup corn flakes
  • 1 cup coconut

Instructions

  1. Mix in a large bowl with an electric mixer on medium speed the granulated sugar, brown sugar, and shortening until light and fluffy.
  2. Add eggs and vanilla; mix well.
  3. In another bowl, sift together the flour, baking soda, baking powder, and salt.
  4. Add the flour mixture to the sugar mixture and mix well with a wooden spoon.
  5. Stir in oats, bran cereal, corn flakes, and coconut; mix well.
  6. Roll the cookie dough into walnut-sized balls and place on a well-greased baking sheet.
  7. Flatten each ball with a fork.
  8. Bake at 350°F (175°C) for 12 to 15 minutes.
