Ingredients

  • 4 egg whites
  • 3/4 cup sugar
  • 1/2 cup buttermilk
  • 2 cups raw grated zucchini
  • 1 tablespoon vanilla
  • 1 1/2 cups white flour
  • 1 1/2 cups wheat flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon

Instructions

  1. Combine the egg whites, sugar, buttermilk, grated zucchini, and vanilla in a mixing bowl.
  2. Sift together the white flour, wheat flour, salt, baking soda, baking powder, and cinnamon, then add to the zucchini mixture and stir until blended.
  3. Pour the batter into two greased 8-inch bread pans.
  4. Bake at 350°F (175°C) for 1 hour.
  5. Remove from pans and cool on a rack.
