Hearty Cabbage Soup

A hearty, comforting cabbage soup layered with bread, tomatoes, and Parmesan, perfect for cold days and satisfying for family dinners or casual gatherings.

Ingredients

  • 4 large slices day-old Italian bread
  • 2 cups shredded cabbage
  • 2 medium onions
  • 2 cloves garlic
  • 16 oz. can whole tomatoes, drained
  • 1/2 cup grated Parmesan cheese
  • 2 quarts chicken stock
  • salt
  • pepper

Instructions

  1. In a flameproof casserole with a tight fitting lid, layer bread, cabbage, onions, and garlic.
  2. Spoon in the drained tomatoes over the layered ingredients.
  3. Sprinkle grated Parmesan cheese over the top.
  4. Carefully pour chicken stock into the casserole so as not to disturb the layers.
  5. Cover and cook over medium heat for 30 minutes.
  6. Season to taste with salt and pepper.
  7. Sprinkle with minced Italian parsley and serve hot.
