Ingredients

  • 2 c. dried pinto beans
  • 12 oz. Spam, cubed
  • 2 (13 oz.) cans tomato juice
  • 2 (14 1/2 oz.) cans Calcine stock
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1/4 c. brown sugar
  • 2 Tbsp. chili powder
  • 3 bay leaves
  • 1 tsp. oregano
  • 1 tsp. cumin

Instructions

  1. Drain and soak dried pinto beans overnight.
  2. In a large pot, combine soaked beans, tomato juice, Calcine stock, chopped onion, minced garlic, brown sugar, chili powder, bay leaves, oregano, and cumin.
  3. Bring to a boil and cook for 10 minutes.
  4. Reduce heat and simmer uncovered for 3 to 4 hours until beans are tender and flavors meld.
