Ingredients

  • 1 can white whole kernel corn
  • 1 can French-style green beans
  • 1 can LeSueur peas
  • 1 cup chopped celery
  • 1 cup chopped bell pepper
  • 1 cup chopped onion
  • 1 (2 oz.) jar chopped pimiento
  • 1 cup sugar
  • 3/4 cup vinegar
  • 1/2 cup oil
  • salt and pepper to taste

Instructions

  1. Drain the corn, green beans, and peas.
  2. Mix the drained vegetables with chopped celery, bell pepper, onion, and pimiento.
  3. Combine sugar and vinegar in a saucepan and bring to a boil. Allow to cool.
  4. Add oil to the cooled mixture and stir thoroughly.
  5. Mix the dressing with the vegetable mixture until evenly coated.
  6. Use as a vegetable side, salad, or relish, and refrigerate for several weeks.
