Ingredients

  • 1 hen
  • water
  • 8 slices bread, toasted
  • 1 skillet cornbread
  • 3 cups chopped celery
  • 3 cups chopped onions
  • 4 eggs
  • 4 tablespoons sage
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, place the hen and cover with water.
  2. Add salt, pepper, and a whole onion.
  3. Cook until the hen is tender.
  4. Reserve the cooking liquid to use as hen broth.
  5. Break toasted bread into small pieces and crumble the cornbread.
  6. In a saucepan, cook chopped celery and onions in water until tender.
  7. In a large roasting pan, combine the bread pieces, cornbread, and cooked celery and onions.
  8. In a bowl, beat the eggs and add sage, salt, pepper, and the reserved hen broth.
  9. Pour the egg mixture over the bread and vegetable mixture, stirring to combine. Add more broth if needed for desired consistency.
  10. Mix thoroughly.
  11. Place the hen on top of the dressing in the roasting pan.
  12. Bake in a preheated 350°F oven for about 1 hour or until browned.
