Ingredients

  • 8 chicken breasts
  • 1/4 cup ground walnuts
  • 1/4 cup ground filberts
  • 4 tablespoons butter
  • 3 tart apples
  • 2/3 cup golden raisins
  • 1/2 cup currants
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon rosemary
  • pinch of thyme
  • 3/4 teaspoon cardamom
  • 1/2 teaspoon salt
  • 1/4 cup white wine
  • 1/2 cup chicken broth

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a Dutch oven or shallow baking dish, sauté the chicken breasts and ground nuts in butter until the meat is white. Remove from heat and set aside.
  3. Cut the tart apples into thin slivers.
  4. Mix the apples with golden raisins and currants.
  5. Stir together cinnamon, rosemary, thyme, cardamom, and salt.
  6. Combine the spice mixture with the fruit mixture.
  7. Distribute the spiced fruit among the chicken breasts and nuts.
  8. Pour the white wine and chicken broth over the mixture.
  9. Cover and bake at 350°F (175°C) for 45 to 50 minutes, or until the chicken is tender.
