Ingredients

  • 1 1/2 Tbsp. olive oil
  • 1 large sweet pepper, cut in strips
  • 2 small zucchini, julienned
  • 2 small yellow summer squash, julienned
  • 1 tsp. fresh thyme or dried thyme
  • 1 tsp. fresh oregano or dried oregano
  • 1/4 tsp. black pepper

Instructions

  1. In a medium bowl, toss the red pepper, zucchini, and yellow summer squash with thyme, oregano, and black pepper.
  2. Drizzle 1 teaspoon of olive oil over the vegetables and toss well to coat.
  3. Spread the vegetables in a single layer on a rack.
  4. Cook the vegetables 8 inches from heat until golden brown on both sides, about 3 to 4 minutes per side.
