Ingredients

  • 2 (10 oz.) packages frozen lima beans
  • 3 Tbsp. butter or oleo
  • 1 medium onion, diced
  • 1 c. herbed stuffing mix
  • 1/3 c. water
  • 1 c. sour cream or plain yogurt
  • 1 Tbsp. flour

Instructions

  1. Cook lima beans as directed on the package.
  2. Cook onion in butter or oleo until soft.
  3. Add stuffing mix and water to the onion and cook briefly.
  4. Stir the mixture and set aside.
  5. Combine sour cream or yogurt with flour and water to make a sauce.
  6. Drain cooked lima beans.
  7. Add the sour cream or yogurt mixture to the lima beans and stir well.
  8. Mix in two-thirds of the stuffing mix and combine.
  9. Pour the mixture into a 1 1/2-quart baking dish.
  10. Sprinkle the remaining stuffing mix on top.
  11. Bake at 350°F for 20 to 25 minutes until bubbly and golden.
