Ingredients

  • 1 cup or 2 sticks soft butter
  • 1 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 2 eggs
  • 1/2 teaspoon red or green food coloring
  • 1 teaspoon peppermint extract
  • 3 cups flour

Instructions

  1. In a large mixing bowl, combine all ingredients except food coloring.
  2. Divide the dough evenly into halves; add food coloring to one half of the dough, then refrigerate for one hour.
  3. Take the plain dough and roll it on a lightly floured surface into a 16 by 9 inch rectangle.
  4. Do the same with the colored dough, then lay it over the plain dough.
  5. Roll them together and wrap tightly in wax paper.
  6. Refrigerate for at least 4 hours.
  7. When ready to bake, heat oven to 400°F (200°C).
  8. Slice the dough about 1/4 inch thick and place on an ungreased cookie sheet.
  9. Bake for 8 to 10 minutes or until golden brown.
