Ingredients

  • 3 lb. chicken breast, skinned and boned
  • 1/4 tsp. garlic powder
  • 1/8 tsp. dried thyme
  • 1/4 cup freshly grated Parmesan cheese
  • 1 Tbsp. minced fresh parsley
  • 1/3 cup fine bread crumbs
  • 1/4 tsp. paprika
  • 1 Tbsp. vegetable oil
  • 2 Tbsp. margarine
  • 1/2 cup Marsala wine

Instructions

  1. Cut the chicken breasts into pieces 1 1/2 to 2 inches wide.
  2. Combine garlic powder, dried thyme, Parmesan cheese, minced parsley, bread crumbs, and paprika in a paper bag.
  3. Coat the chicken pieces with the seasoning mixture by shaking the bag.
  4. Place the coated chicken in a baking dish and press any remaining seasoning into the chicken.
  5. Sprinkle the chicken with vegetable oil and melted margarine.
  6. Bake uncovered at 350°F for 30 minutes.
  7. Pour Marsala wine over the chicken and cover with foil.
  8. Reduce oven temperature to 325°F and bake for an additional 15 minutes.
  9. Remove the foil and raise the oven temperature to 350°F.
  10. Bake for another 10 minutes until golden and cooked through.
