Ingredients

  • 1 cup chopped onions
  • 2 cups chopped celery
  • 2 tablespoons butter or oleo
  • 1 (4 oz) can sliced mushrooms, drained
  • 1 (2 oz) jar chopped pimento
  • 3 cups cooked chicken
  • 3 cups cooked rice, prepared in chicken broth
  • 3/4 cup chicken broth
  • 1 (10 3/4 oz) can condensed cream of mushroom soup
  • salt and pepper
  • 2 cups grated cheese

Instructions

  1. Cook onions and celery in butter until tender, but not brown. Stir in mushrooms, pimentos, chicken, and cooked rice.
  2. Blend chicken broth and condensed cream of mushroom soup until smooth.
  3. Stir the soup mixture into the chicken and rice mixture.
  4. Add salt and pepper to taste.
  5. Turn the mixture into a greased 8 x 12 x 2-inch baking dish.
  6. Sprinkle grated cheese over the top.
  7. Bake at 350°F for 30 minutes or until hot and bubbly.
