Herbed Simmered Beef Stew

Ingredients
- 2 lb. beef for stew, cut into 1 inch cubes ⓘ
- Freshly ground pepper
- 2 Tbsp. all-purpose flour ⓘ
- 2 Tbsp. olive oil ⓘ
- 3 cups thickly sliced mushrooms
- 3 cloves garlic, minced ⓘ
- 1/2 tsp. dried marjoram, crushed ⓘ
- 1/2 tsp. dried thyme, crushed ⓘ
- 1/2 tsp. dried rosemary, crushed ⓘ
- 1 bay leaf ⓘ
- 1 can (14 oz.) beef broth ⓘ
Instructions
- Season beef with freshly ground pepper and coat with flour.
- Heat olive oil in a saucepan over medium heat.
- Add beef cubes and cook until browned, stirring often.
- Add sliced mushrooms, minced garlic, dried herbs, and bay leaf; cook until mushrooms are tender and liquid evaporates.
- Pour in beef broth and bring to a boil.
- Cover and simmer over low heat for 45 minutes.
- Add baby carrots and peeled baby red-skinned potatoes.
- Bring to a boil again, then cover and cook over low heat for another 30 minutes or until vegetables are tender.
- Remove and discard the bay leaf before serving.
