Ingredients

  • 2 lb. beef for stew, cut into 1 inch cubes
  • Freshly ground pepper
  • 2 Tbsp. all-purpose flour
  • 2 Tbsp. olive oil
  • 3 cups thickly sliced mushrooms
  • 3 cloves garlic, minced
  • 1/2 tsp. dried marjoram, crushed
  • 1/2 tsp. dried thyme, crushed
  • 1/2 tsp. dried rosemary, crushed
  • 1 bay leaf
  • 1 can (14 oz.) beef broth

Instructions

  1. Season beef with freshly ground pepper and coat with flour.
  2. Heat olive oil in a saucepan over medium heat.
  3. Add beef cubes and cook until browned, stirring often.
  4. Add sliced mushrooms, minced garlic, dried herbs, and bay leaf; cook until mushrooms are tender and liquid evaporates.
  5. Pour in beef broth and bring to a boil.
  6. Cover and simmer over low heat for 45 minutes.
  7. Add baby carrots and peeled baby red-skinned potatoes.
  8. Bring to a boil again, then cover and cook over low heat for another 30 minutes or until vegetables are tender.
  9. Remove and discard the bay leaf before serving.
